
This is no Martha Stewart recipe. Just something that I like to make often. What you do is get 3-4 large zuchinni (for 2-3 people) and grate it into a medium pan, add a little extra virgin olive oil, and just cook until soft. You will think you have grated a ton of zuchinni, but it always cooks down. I like to drain the excess water, and then plate your zuchinni. I then add my fav spaghetti sauce--which is the Prego Organic Tomato and Basil--(it has the best flavor!) Then you can just top it off with some parmesan, or mozz--and you are done!! It is literally no fat, and hardly any calories--plus tons of lycopene! What more could you ask for? Andrew and Caleb love it, and it is so easy. Try it out when you don't have much itme for a full out meal--let me know what you think. Squash is also very delicious!
